    Rinse and Cook Millet

    Rinse the millet under cold water in a fine mesh strainer. In a medium saucepan, combine the rinsed millet and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the millet is tender and the water is absorbed.

    Sauté Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 2-3 minutes until translucent. Add the diced carrot, bell pepper, and zucchini, and continue to sauté for another 5-7 minutes until the vegetables are tender.

    Add Seasonings

    Stir in the minced garlic, salt, black pepper, cumin, and paprika. Cook for an additional 1-2 minutes until the garlic is fragrant.

    Combine Millet and Chickpeas

    Once the millet is cooked, fluff it with a fork and add it to the skillet with the sautéed vegetables. Stir in the cooked chickpeas and mix well to combine. Cook for another 2-3 minutes until heated through.

    Garnish and Serve

    Remove from heat and stir in the chopped parsley. Serve warm with lemon wedges on the side for squeezing over the dish.
