Method
Cooking the Pasta

Boil Water
In a large pot, bring 4-6 quarts of water to a boil. Add the salt.

Cook Fettuccine
Add the fettuccine pasta to the boiling water and cook according to package instructions until al dente, usually about 10-12 minutes.

Drain Pasta
Once cooked, reserve 1 cup of pasta water and then drain the pasta in a colander.
Cooking the Shrimp

Heat Olive Oil
In a large skillet over medium heat, add the olive oil.

Cook Shrimp
Add the shrimp, salt, and black pepper. Cook for about 2-3 minutes per side until the shrimp are pink and opaque.

Remove Shrimp
Once cooked, remove the shrimp from the skillet and set aside.
Making the Sauce

Add Butter and Cream
In the same skillet, add the butter and heavy cream. Stir over medium heat until the butter is melted and the mixture is combined.

Incorporate Parmesan
Gradually whisk in the grated Parmesan cheese until fully melted and smooth.

Season the Sauce
Add the nutmeg and stir to combine. If the sauce is too thick, add reserved pasta water as needed to reach desired consistency.
Combining Everything

Combine Pasta and Sauce
Add the drained fettuccine to the sauce in the skillet and toss to coat evenly.

Add Cooked Shrimp
Add the cooked shrimp to the pasta and sauce mixture, tossing gently to combine.

Garnish and Serve
Serve hot, garnished with chopped fresh parsley.
