Method

Preparation

  1. 1

    Wash and Peel Potatoes

Wash the Russet potatoes thoroughly under running water. Peel the potatoes using a vegetable peeler.

  2. 2

    Cut Potatoes

Cut the peeled potatoes into thin strips, about 1/4 inch thick. Try to keep the size uniform for even cooking.

Soaking

  1. 3

    Soak the Potatoes

Place the cut potato strips in a bowl of cold water and soak for at least 30 minutes. This helps remove excess starch and results in crispier fries.

Frying

  1. 4

    Heat Oil

In a large, heavy pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

  2. 5

    Dry the Potatoes

Drain the soaked potatoes and pat them dry with kitchen towels to remove excess moisture.

  3. 6

    Fry the Potatoes

Carefully add a handful of dried potato strips into the hot oil. Fry them in batches to avoid overcrowding. Fry for about 4-5 minutes, or until golden brown.

  4. 7

    Drain and Season

Using a slotted spoon, remove the fries from the oil and place them on a plate lined with paper towels to drain excess oil. While still hot, sprinkle with salt, black pepper, and paprika to taste.

Serving

  1. 8

    Serve

Serve the French fries hot, optionally with ketchup or your favorite dipping sauce.
