Beer Battered Fish

    Prepare the Batter

    In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer until the batter is smooth and has no lumps. Let it rest for about 15 minutes.

    Heat the Oil

    In a deep frying pan or pot, heat the oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; if it sizzles, it’s ready.

    Fry the Fish

    Dip each fish fillet into the batter, allowing excess to drip off. Carefully lower them into the hot oil, frying in batches to avoid overcrowding. Cook for about 4-5 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Chips

    Prepare the Potatoes

    Peel the potatoes and cut them into thick strips. Rinse them under cold water to remove excess starch, then pat them dry with a clean towel.

    Fry the Chips

    In a separate pot, heat the oil over medium heat. Once hot, add the potato strips in batches and fry them for about 5-7 minutes or until they start to become tender but not yet brown. Remove and drain on paper towels.

    Final Fry

    Increase the heat of the oil to high and return the chips to the oil. Fry for an additional 3-4 minutes until golden brown and crispy. Remove, season with salt, and set aside.

Mushy Peas

    Prepare the Peas

    In a small pot, bring water to a boil and add the frozen peas. Cook for about 3-4 minutes until tender.

    Mash the Peas

    Drain the peas and return them to the pot. Add butter, salt, and black pepper. Mash with a fork or potato masher until they reach your desired level of smoothness.

Tartare Sauce

    Mix the Ingredients

    In a mixing bowl, combine mayonnaise, chopped pickles, capers, lemon juice, and fresh dill. Stir until well combined. Adjust seasoning if needed.
