Fish Preparation

    Make the Batter

    In a mixing bowl, combine all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer until the batter is smooth and has no lumps.

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Batter the Cod

    Dip each cod fillet into the batter, allowing the excess to drip off before carefully placing it in the hot oil.

    Fry the Fish

    Fry the cod in batches for about 4-5 minutes or until golden brown. Remove from the oil and drain on paper towels.

Chips Preparation

    Cut the Potatoes

    Peel and cut the potatoes into thick chips (about 1/2 inch wide).

    Soak the Chips

    Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a separate pot, heat the vegetable oil over medium-high heat. Once hot, carefully add the soaked and drained potatoes.

    Fry the Chips

    Fry the chips for about 5-7 minutes until they are golden and crispy. Remove and drain on paper towels, sprinkling with salt.

Tartar Sauce Preparation

    Mix the Sauce

    In a bowl, combine mayonnaise, finely chopped pickles, lemon juice, and Dijon mustard. Stir well to combine.

    Season with salt and black pepper to taste. Mix again and refrigerate until serving.
