Calamari Preparation

Prepare the Calamari
Begin by rinsing the calamari rings under cold water. Pat them dry with paper towels to remove excess moisture.

Mix the Dry Ingredients
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. Whisk together until well combined.

Dredge the Calamari
Coat the calamari rings in the flour mixture, ensuring they are evenly covered. Shake off any excess flour.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches, frying for about 2-3 minutes or until golden brown and crispy. Avoid overcrowding the pot.

Drain and Serve
Using a slotted spoon, remove the fried calamari and place them on a paper towel-lined plate to drain any excess oil. Serve immediately.
Spicy Aioli Preparation

Make the Aioli
In a small bowl, combine the mayonnaise, minced garlic, sriracha sauce, lemon juice, and salt. Mix well until smooth and creamy.

Adjust Seasoning
Taste the aioli and adjust the seasoning with more salt if necessary. If you prefer more heat, add more sriracha.

Transfer the spicy aioli to a serving bowl and serve it alongside the crispy calamari.
