    Prepare the Vegetables

    Peel and dice the potatoes into small cubes. Chop the onions, celery, and carrots into small pieces.

    Measure the Ingredients

    Gather all the other ingredients including corn, vegetable broth, heavy cream, butter, salt, pepper, and herbs.

Cooking

    Sauté the Base Ingredients

    In a large pot, melt the butter over medium heat. Add the chopped onions, celery, and carrots. Sauté for about 5 minutes until the vegetables begin to soften.

    Add Potatoes and Corn

    Stir in the diced potatoes and corn kernels. Mix well with the sautéed vegetables.

    Add Broth and Simmer

    Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for about 15-20 minutes or until the potatoes are tender.

    Add Cream and Seasonings

    Stir in the heavy cream, salt, and black pepper. Let the chowder simmer for an additional 5 minutes.

    Add Fresh Herbs

    Finally, stir in the chopped fresh thyme, parsley, and dill. Allow the chowder to simmer for another 2-3 minutes to infuse the flavors.

Serving

    Serve the Chowder

    Ladle the chowder into bowls and garnish with additional fresh herbs if desired. Serve hot.
