Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C).

  2. 2

    Prepare Ramekins

Grease four ramekins with butter and dust them with flour to prevent sticking.

Making the Cake

  1. 3

    Melt Chocolate and Butter

In a microwave-safe bowl, combine the dark chocolate and unsalted butter. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.

  2. 4

    Mix Dry Ingredients

In a separate bowl, whisk together the granulated sugar, all-purpose flour, and salt.

  3. 5

    Combine Mixtures

Add the melted chocolate-butter mixture to the dry ingredients and mix until well combined.

  4. 6

    Add Eggs and Vanilla

Incorporate the large eggs, egg yolks, and vanilla extract into the mixture, whisking until smooth and glossy.

  5. 7

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

Baking

  1. 8

    Bake the Cakes

Place the ramekins in the preheated oven and bake for 12-14 minutes, or until the edges are firm but the center is still soft.

  2. 9

    Cool Slightly

Remove the ramekins from the oven and let them cool for about 1 minute.

Serving

  1. 10

    Invert and Serve

Carefully run a knife around the edges of the cakes to loosen them. Invert each ramekin onto a plate and gently lift it off. Dust with powdered sugar and serve warm with a scoop of vanilla ice cream and fresh berries.
