Preparing the Chocolate Fondant

    Melt the Chocolate and Butter

    In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler method) and stir until completely melted and smooth. Remove from heat and let it cool slightly.

    Mix Eggs and Sugar

    In a separate mixing bowl, whisk together the whole eggs, egg yolks, and granulated sugar until the mixture is pale and frothy.

    Combine Mixtures

    Slowly pour the melted chocolate mixture into the egg and sugar mixture while continuously whisking to prevent the eggs from cooking.

    Add Dry Ingredients

    Sift the all-purpose flour and salt into the chocolate mixture, then gently fold it in using a spatula until just combined. Be careful not to overmix.

    Prepare Baking Molds

    Preheat your oven to 200°C (400°F). Grease four ramekins with butter and dust them with cocoa powder or flour, tapping out the excess.

    Fill Ramekins

    Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

    Bake

    Place the ramekins on a baking tray and bake in the preheated oven for 10-12 minutes, or until the edges are firm but the center is still soft.

    Cool and Serve

    Remove the fondants from the oven and let them cool for 1 minute. Carefully invert each ramekin onto a plate, allowing the fondant to slide out. Serve immediately with a scoop of vanilla ice cream and garnish with shaved dark chocolate.
