Preparing the Chocolate Fondant

Melt the Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler method) and stir until completely melted and smooth. Remove from heat and let it cool slightly.

Mix Eggs and Sugar
In a separate mixing bowl, whisk together the whole eggs, egg yolks, and granulated sugar until the mixture is pale and frothy.

Add Dry Ingredients
Sift the all-purpose flour and salt into the chocolate mixture, then gently fold it in using a spatula until just combined. Be careful not to overmix.

Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

Bake
Place the ramekins on a baking tray and bake in the preheated oven for 10-12 minutes, or until the edges are firm but the center is still soft.

Cool and Serve
Remove the fondants from the oven and let them cool for 1 minute. Carefully invert each ramekin onto a plate, allowing the fondant to slide out. Serve immediately with a scoop of vanilla ice cream and garnish with shaved dark chocolate.
