    Prepare the crust

    Preheat your oven to 350°F (175°C). In a medium bowl, mix the graham cracker crumbs, granulated sugar, and melted butter until well combined.

    Form the crust

    Press the mixture firmly into the bottom of a 9-inch springform pan. Use a flat-bottomed glass or measuring cup to pack it down tightly.

    Bake the crust

    Bake the crust in the preheated oven for 8-10 minutes, until set. Remove from the oven and allow to cool while preparing the filling.

Cheesecake Filling

    Prepare the filling

    In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

    Add sugar and vanilla

    Gradually add granulated sugar and vanilla extract, mixing until fully incorporated.

    Add sour cream and flour

    Mix in the sour cream and all-purpose flour until smooth.

    Incorporate eggs

    Add the eggs one at a time, mixing on low speed after each addition until just combined. Be careful not to overmix.

    Pour into crust

    Pour the cheesecake filling over the cooled crust in the springform pan.

    Bake the cheesecake

    Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven, crack the door open, and let the cheesecake cool in the oven for an hour.

    Chill the cheesecake

    Remove from the oven and refrigerate for at least 4 hours, preferably overnight.

Berry Compote

    Prepare the berries

    In a medium saucepan over medium heat, combine the mixed berries, granulated sugar, and lemon juice.

    Cook the compote

    Stir occasionally and cook for about 10-15 minutes until the berries have released their juices and the mixture has thickened slightly.

    Cool the compote

    Remove from heat and let the berry compote cool. It can be stored in the refrigerator until ready to serve.
