For the Calamari

    Prepare the Ingredients

    Rinse the calamari rings under cold water and pat dry with paper towels. This helps remove excess moisture.

    Make the Coating

    In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well to ensure an even coating.

    Soak the Calamari

    Pour the buttermilk into a separate bowl and add the calamari rings. Let them soak for about 15 minutes. This will help the coating adhere better.

    Heat the Oil

    In a large deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test it by dropping a small bit of the coating into the oil; it should sizzle immediately.

    Coat the Calamari

    Remove the calamari from the buttermilk, allowing excess to drip off. Dredge the calamari in the flour mixture, ensuring each piece is thoroughly coated.

    Fry the Calamari

    Carefully add the coated calamari to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes until golden brown and crispy. Use a slotted spoon to remove them and place on a paper towel-lined plate to drain excess oil.

For the Garlic Aioli

    Prepare the Garlic

    Mince the garlic cloves finely. You can also use a garlic press for convenience.

    Combine Ingredients

    In a small bowl, mix together the mayonnaise, minced garlic, lemon juice, salt, and black pepper. Stir until well combined.

    Chill the Aioli

    Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld together.
