    Prepare the Honey Syrup

    In a small saucepan, combine equal parts local honey and water (1 tablespoon each) over low heat. Stir gently until the honey is fully dissolved into the water. Remove from heat and let cool.

    Mix the Drink

    In a cocktail shaker, combine 2 oz of Far North Solvig Gin, 3 tbsp of fresh lemon juice, and 1 tbsp of the cooled honey syrup. Fill the shaker with ice.

    Shake

    Seal the cocktail shaker and shake well for about 15-20 seconds until the mixture is well chilled.

    Strain and Serve

    Strain the mixture into a chilled coupe or cocktail glass. Use a fine mesh strainer if desired to catch any pulp from the lemon juice.

    Garnish

    Twist a strip of lemon peel over the drink to release its oils, then place the twist into the glass as a garnish.
