Method
For the Beer Battered Cheese Curds
- 1
Prepare the Cheese Curds
Ensure the cheese curds are cold; this helps them hold their shape while frying.
- 2
Make the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer until the batter is smooth and thick.
- 3
Heat the Oil
In a large, heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.
- 4
Batter the Cheese Curds
Dip each cheese curd into the batter, ensuring they are fully coated. Allow excess batter to drip off.
- 5
Fry the Cheese Curds
Carefully drop the battered cheese curds into the hot oil in small batches. Fry for about 3-4 minutes or until golden brown, flipping them halfway through. Remove them with a slotted spoon and place them on paper towels to drain excess oil.
- 6
Serve
Serve the beer battered cheese curds hot, with the honey chipotle aioli on the side for dipping.

Taste and adjust seasoning if necessary, adding more honey for sweetness or chipotle for heat.
- 9
Chill
Refrigerate the aioli for at least 30 minutes before serving to let the flavors meld together.
