Herb and Spice Infusion

    Prepare the Infusion

    In a medium saucepan, combine the caraway seeds, dill seeds, fennel seeds, coriander seeds, and dried orange peel.

    Add Water

    Pour in the water and bring the mixture to a gentle simmer over medium heat.

    Simmer

    Allow the mixture to simmer for about 10 minutes, stirring occasionally to release the flavors.

    Cool and Strain

    Remove from heat and let the infusion cool completely. Once cooled, strain the mixture through a fine sieve or cheesecloth into a clean container, discarding the solids.

Combine with Alcohol

    Combine Ingredients

    In a large glass jar or bottle, combine the strained herb and spice infusion with the neutral grain spirit.

    Mix Well

    Seal the jar or bottle tightly and shake gently to mix the ingredients thoroughly.

    Infuse

    Allow the mixture to infuse in a cool, dark place for at least 2 weeks, shaking the jar every few days to help the flavors meld.

    Taste and Adjust

    After 2 weeks, taste the aquavit. If you desire a stronger flavor, let it infuse for another week or so.

    Bottle and Serve

    Once satisfied with the flavor, strain the aquavit again to remove any particles, then bottle it in a clean bottle. Serve chilled or at room temperature.
