Pat the ribeye steaks dry with paper towels to remove excess moisture. Season both sides generously with salt, black pepper, and garlic powder.

Let the seasoned steaks sit at room temperature for about 30 minutes before cooking. This helps them cook evenly.

Heat a large skillet or grill pan over medium-high heat. Add the olive oil and let it heat until it shimmers.
