Prepare the Calamari
In a bowl, soak the calamari rings in buttermilk for at least 30 minutes to tenderize.

Mix Dry Ingredients
In a separate mixing bowl, combine the flour, cornstarch, salt, black pepper, paprika, and garlic powder. Whisk until well blended.

Heat the Oil
In a large, deep frying pan, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C). You can test the oil by dropping in a small amount of the flour mixture; if it sizzles immediately, it's ready.

Coat the Calamari
Remove the calamari from the buttermilk and allow excess to drip off. Dredge the calamari rings in the flour mixture, ensuring they are fully coated.

Fry the Calamari
Carefully place the coated calamari rings into the hot oil in batches. Fry for about 2-3 minutes, or until they are golden brown and crispy. Avoid overcrowding the pan.

Drain and Serve
Use a slotted spoon to transfer the fried calamari to a paper towel-lined plate to drain excess oil. Season with salt while hot.

In a small bowl, mix together the mayonnaise, sriracha sauce, lemon juice, minced garlic, and salt. Adjust the seasoning to taste.
