Beef Patties

1. Mix the meat

Place the ground beef in a bowl. Add kosher salt, black pepper, Worcestershire sauce, garlic powder and onion powder. Gently fold ingredients together with your hands or a spatula until just combined — do not overwork (about 10–12 turns) to keep patties tender.

2. Portion and shape

Divide the mixture into 12 equal portions (about 2 ounces / ~56 g each). Lightly roll each portion into a ball, then press into thin patties roughly the diameter of the mini buns (they will shrink while cooking). Make a shallow indentation in the center of each patty with your thumb to help them cook flat.

3. Prep the onions

Peel the onions and cut into 1/4-inch thick slices, then separate into rings. Heat 1 tablespoon olive oil in a skillet over medium heat. Add the onion rings and sprinkle with 1/4 tsp kosher salt. Cook, stirring occasionally, until softened and golden brown and edges are slightly caramelized, 10–15 minutes. Remove from pan and keep warm.

4. Toast the buns

Split the mini buns. Spread a thin layer of the softened butter on the cut sides. After cooking the patties (see next section), return the skillet or a clean pan to medium heat and toast the buttered cut sides, 1–2 minutes, until golden and crisp. Remove and set aside.

5. Cook the patties

Heat a large skillet or griddle over medium-high heat and add 1 tablespoon vegetable oil, swirling to coat. Working in batches if necessary, add patties without crowding. Cook until browned at the edges and an internal temperature of 160°F (71°C) is reached, about 2–3 minutes per side for thin 2-ounce patties. Transfer cooked patties to a plate and tent loosely with foil to keep warm.

Sauce & Serving

6. Assemble the sliders

Spread ketchup on the bottom (or top) half of each toasted bun. Place one cooked patty on each bottom bun. Add 1–2 rings of the grilled onion and two pickle slices per slider. Top with the bun crown and secure with a toothpick if desired.

7. Serve

Arrange sliders on a platter and serve immediately while hot with extra ketchup on the side.
