Measure and combine

Add Mt. Gay rum (30 ml), Sailor Jerry spiced rum (15 ml), fresh lime juice (25 ml), orange curaçao (15 ml), orgeat (15 ml), simple syrup (10 ml), pineapple juice (30 ml) and orange juice (30 ml) to a cocktail shaker.

Add ice and shake

Add 6 ice cubes to the shaker. Secure the lid and shake vigorously for 12–15 seconds until the shaker is cold to the touch and the ingredients are well combined and slightly frothy.

Prepare glass

Pack a double old-fashioned or tiki glass with about 1 cup crushed ice.

Strain

Double-strain the shaken cocktail over the crushed ice to remove any large ice shards and pulp, leaving the drink bright and smooth.

Garnish and finish

Gently clap the mint sprig between your palms to release the aroma and tuck it into the drink next to a lime wheel, a pineapple wedge and a maraschino cherry. Serve with a short straw. Adjust sweetness with a small splash more simple syrup if desired.
