Prepare crab meat
Pick over the lump crab meat to remove any shell fragments and excess liquid. Gently break up any large lumps with your hands or a fork; avoid turning the meat into mush.

Make the binding mixture
In a medium bowl whisk together 0.33 cups mayonnaise, 1 large egg, 1 tbs Dijon mustard, 1 tsp Worcestershire sauce, 1 tsp Old Bay, 1 tsp lemon zest, 1 tbs lemon juice, 1 tsp kosher salt and 0.5 tsp black pepper until smooth. Stir in the 2 tbs chopped parsley and the finely minced shallot.

Combine with crab and panko
Fold the picked crab meat into the mayonnaise mixture gently until combined. Sprinkle 0.5 cups panko breadcrumbs into the mixture and fold just until the mixture holds together—do not overmix. The panko absorbs moisture and helps hold the bites without making them dense.

Chill to firm
Cover the bowl and refrigerate the crab mixture for 15–20 minutes to firm up; this makes shaping easier and results in a neater exterior when frying.

Shape into bite-sized cakes
Using a tablespoon or small cookie scoop, portion the chilled mixture into roughly 24 bite-sized balls (about 1 inch / 2.5 cm each). Place them on a parchment-lined tray or plate and keep chilled while you prepare the dredging station.

Set up dredging station
Arrange three shallow dishes: one with 0.5 cups all-purpose flour (season lightly with a pinch of salt and pepper), one with the 1 beaten egg, and one with 1.5 cups panko breadcrumbs for coating. Roll each crab bite lightly in flour, shake off excess, dip into beaten egg, then press into panko to coat completely. Place coated bites back on a tray and refrigerate for 5–10 minutes to help the coating adhere.

Heat the oil
Pour 500 ml (about 2 cups) vegetable oil into a heavy skillet to a depth of about 1/2 inch (1–1.5 cm) and heat over medium-high until the oil registers 175°C (350°F) on a thermometer or a breadcrumb sizzles and browns in ~30–40 seconds. If you don't have a thermometer, maintain a steady medium-high heat—oil should shimmer but not smoke.

Fry in batches
Working in batches (do not overcrowd the pan), fry the coated crab bites in the hot oil for 2–3 minutes per side, turning once, until evenly golden-brown and crisp. Adjust heat as needed to maintain 175°C (350°F). Use a slotted spoon or spider to transfer the bites to a wire rack set over a baking sheet or to paper towels to drain. Keep finished bites warm in a 95–100°C (200°F) oven while you finish remaining batches.

Finish and serve
Once all bites are cooked, arrange on a platter, squeeze a little fresh lemon over them if desired and sprinkle with the remaining tablespoon of chopped parsley for color. Serve hot with the mustard dipping sauce.

In a small bowl whisk together 0.33 cups Dijon mustard, 2 tbs honey, 2 tbs mayonnaise and 1 tbs lemon juice until smooth.

Transfer to a serving bowl, garnish with 1 tbs chopped parsley, and chill for 5–10 minutes if time allows. Serve alongside the warm crab bites.
