Burger Preparation

    Prepare the Patty

    In a bowl, combine the ground beef and brisket. Form into a 7oz patty and season with salt and pepper. Grill or pan-fry the patty to your desired doneness.

    Cook the Bacon

    In a skillet, cook the smoked bacon until crispy. Set aside on paper towels to drain excess fat.

    Melt the Cheese

    In the last couple of minutes of cooking the patty, place the jalapeño cheese on top and cover until melted.

Aioli Preparation

    Make the Aioli

    In a bowl, mix together the dairy-free mayonnaise, minced garlic, lemon juice, smoked paprika, and salt. Adjust seasoning to taste.

Shallots and Fries Preparation

    Fry the Shallots

    Dredge the sliced shallots in flour and fry in hot oil until golden brown. Remove and drain on paper towels.

    Prepare the Fries

    Cut the potatoes into fry shapes. Soak in cold water for 30 minutes, then drain and dry. Fry in hot oil until golden and crispy. Season with salt.

Assembly

    Assemble the Burger

    On a gluten-free bun, spread the burnt onion aioli, add the cooked patty with cheese, top with smoked bacon, mustard pickles, and fried shallots. Serve with hand-cut fries on the side.
