Prepare the Turkey
Rinse the turkey under cold water and pat it dry with paper towels. Remove the giblets from the cavity.

Marinate
In a bowl, mix the olive oil, garlic powder, onion powder, smoked paprika, salt, black pepper, and apple cider vinegar. Rub this mixture all over the turkey, including under the skin and inside the cavity. Stuff the cavity with fresh herbs. Let marinate for at least 4 hours, preferably overnight in the refrigerator.

Prepare the Smoker
Preheat your smoker to 225°F (107°C). Soak the hickory wood chips in water for at least 30 minutes before using.

Smoke the Turkey
Place the turkey on the smoker rack, breast side up. Add the soaked wood chips to the smoker box or directly onto the coals. Smoke the turkey for about 30 minutes per pound, or until the internal temperature reaches 165°F (74°C) in the thickest part of the breast.

Once smoked, remove the turkey from the smoker and let it rest for at least 30 minutes before carving.
