Method

Brisket Preparation

  1. 1

    Prepare the Rub

In a small bowl, mix together kosher salt, black pepper, smoked paprika, garlic powder, onion powder, and brown sugar.

  2. 2

    Season the Brisket

Rub the mixture all over the brisket, ensuring an even coating. Drizzle with liquid smoke.

  3. 3

    Refrigerate

Wrap the brisket in plastic wrap and refrigerate for at least 4 hours, preferably overnight.

  4. 4

    Smoke the Brisket

Preheat your smoker to 225°F (107°C). Place the brisket in the smoker and smoke for about 1 hour per pound, or until the internal temperature reaches 195°F (90°C).

  5. 5

    Rest the Brisket

Remove from the smoker and let it rest for at least 30 minutes before slicing.

Coleslaw Preparation

  1. 6

    Mix Ingredients

In a large bowl, combine shredded cabbage, shredded carrots, mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Mix well until combined.

  2. 7

    Chill

Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.

Vegetables or Fries Preparation

  1. 8

    Prepare Vegetables

Toss mixed vegetables with olive oil, salt, and black pepper. Roast in the oven at 400°F (200°C) for about 20 minutes or until tender.

Serving

  1. 9

    Assemble the Plate

Slice the brisket against the grain and serve with coleslaw, dill pickles, signature house sauce, and your choice of vegetables or fries.
