    Make the Pastry Dough

    In a large bowl, combine the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the egg and vanilla extract until the dough comes together. Wrap in plastic wrap and refrigerate for at least 30 minutes.

    Prepare the Fillings

    While the dough is chilling, prepare your desired fillings such as chocolate ganache, pastry cream, or fruit preserves. Make sure they are cooled and ready for assembly.

    Roll Out the Dough

    Preheat the oven to 350°F (175°C). On a floured surface, roll out the chilled dough to about 1/8 inch thick. Cut into small squares or circles, depending on your desired shape.

    Fill and Bake

    Place a small amount of your chosen filling in the center of each pastry shape. Fold over or cover as necessary. Bake in the preheated oven for 15-20 minutes or until golden brown.

    Cool and Serve

    Allow the pastries to cool completely. Dust with powdered sugar or top with chocolate shavings or fresh fruit if desired. Serve as bite-sized treats.
