Preparation

  1. 1

    Prepare the Meats

Season the St. Louis cut pork ribs and CAB beef brisket with your favorite dry rub and let them marinate for at least 4 hours, preferably overnight. For the buttermilk fried chicken, marinate the chicken pieces in buttermilk for at least 2 hours.

  2. 2

    Pit Smoking

Preheat your pit smoker to 225°F (107°C). Place the pork ribs and brisket in the smoker and cook for about 6 hours, or until they reach an internal temperature of 195°F (90°C).

  3. 3

    Frying the Chicken

While the meats are smoking, heat oil in a deep fryer to 350°F (175°C). Remove the chicken from the buttermilk, dredge in seasoned flour, and fry until golden brown and cooked through, about 10-12 minutes.

  4. 4

    Preparing Sausage and Pulled Pork

Grill the cheddar jalapeño sausage until heated through. If using pre-cooked pulled pork, reheat it gently over medium heat until warmed through.

Serving

  1. 5

    Plate the Platter

On a large platter, arrange the smoked ribs, brisket, fried chicken, sausage, and pulled pork. Serve alongside dill pickles, fries, and your choice of house-made BBQ sauce and spicy mustard sauce.

  2. 6

    Enjoy

Serve warm and enjoy the pit-smoked pitmaster platter with your friends and family!
