Method

Preparation

  1. 1

    Soak the Beans

Rinse the navy beans and place them in a large bowl. Cover with water and let them soak overnight or for at least 8 hours.

  2. 2

    Cook the Beans

Drain and rinse the soaked beans. In a large pot, combine the beans and 6 cups of fresh water. Bring to a boil, then reduce heat and simmer for 1 hour or until beans are tender.

Cooking

  1. 3

    Brown the Meats

In a large skillet over medium heat, add the ground beef and diced pork shoulder. Cook until browned, breaking up the beef as it cooks. Drain excess fat if necessary.

  2. 4

    Sauté the Vegetables

Add the chopped onion, green bell pepper, and minced garlic to the skillet with the meats. Cook until the vegetables are soft, about 5-7 minutes.

  3. 5

    Combine Ingredients

In a large mixing bowl, combine the cooked beans, meat and vegetable mixture, tomato sauce, brown sugar, apple cider vinegar, mustard, smoked paprika, black pepper, and salt. Mix well.

  4. 6

    Bake the Beans

Transfer the mixture to a large baking dish or a Dutch oven. Cover and bake in a preheated oven at 300°F (150°C) for 2-3 hours, or until the flavors meld and the beans are thick and bubbly.
