Cake Preparation

    Preheat the Oven

    Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Mix Dry Ingredients

    In a large bowl, whisk together the flour, sugar, baking soda, baking powder, cinnamon, nutmeg, and salt.

    Mix Wet Ingredients

    In another bowl, combine the vegetable oil, eggs, and vanilla extract. Whisk until well combined.

    Combine Mixtures

    Add the wet ingredients to the dry ingredients and mix until just combined. Fold in the grated carrots.

    Bake the Cake

    Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

    Cool the Cakes

    Remove from the oven and allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.

Frosting Preparation

    Make the Frosting

    In a medium bowl, beat the cream cheese and butter together until smooth and creamy. Gradually add the powdered sugar and vanilla extract, mixing until fluffy.

    Frost the Cake

    Once the cakes are completely cooled, place one layer on a serving plate. Spread a layer of frosting on top, then place the second cake layer on top and frost the top and sides of the cake.
