    Prepare the Dressing

    In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, minced garlic, salt, and black pepper until well combined. Set aside.

    Grill the Bacon

    In a grill pan, cook the double-smoked bacon over medium heat until crispy. Remove and let drain on paper towels.

    Prepare the Romaine

    Cut the romaine heads in half lengthwise. Brush the cut sides with olive oil and season with salt and pepper.

Grilling

    Grill the Romaine

    Preheat the grill. Grill the romaine halves, cut side down, for about 2-3 minutes until charred and slightly wilted. Flip and grill for another 1-2 minutes.

Assembly

    Assemble the Salad

    On a serving plate, place the grilled romaine halves. Top with crispy bacon, white anchovies, garlic croutons, pickled onions, and parmesan cheese. Drizzle the dressing over the top.

    Add Optional Proteins

    If desired, add a piece of fried chicken or a slice of smoked turkey on top of the salad.
