Brewing Directions for Goose Island IPA

    Mash the Grains

    In a large mash tun, heat 5 liters of water to 66°C (150°F). Add the pale malt and caramel malt, stirring well. Maintain the temperature for 60 minutes.

    Sparging

    After the mash, sparge the grains with hot water to collect about 7 liters of wort in your brew kettle.

    Boil the Wort

    Bring the wort to a boil and add 1 oz of Citra hops. Boil for 60 minutes, adding the remaining 1 oz of Citra hops and 1 oz of Cascade hops in the last 15 minutes of the boil.

    Cooling the Wort

    After the boil, cool the wort quickly using a wort chiller or by placing the kettle in an ice bath until it reaches about 20°C (68°F).

    Fermentation

    Transfer the cooled wort to a sanitized fermentation vessel. Pitch the yeast and seal with an airlock. Ferment at around 20°C (68°F) for 1-2 weeks.

    Bottling

    After fermentation is complete, dissolve priming sugar in a small amount of water and add it to the beer. Bottle the beer in sanitized bottles and cap them.

    Carbonation

    Let the bottles sit at room temperature for about 1-2 weeks for carbonation to develop. Then refrigerate and enjoy your Goose Island IPA!
