Prepare the Filling
In a large bowl, combine the shredded brisket, salsa verde, chopped cilantro, diced onion, minced garlic, cumin, salt, and pepper. Mix well and set aside.

Assemble the Empanadas
Preheat the oven to 400°F (200°C). On a clean surface, take an empanada dough piece and place 2 tablespoons of the brisket filling in the center. Fold the dough over to create a half-moon shape and press the edges to seal. Use a fork to crimp the edges for a decorative touch. Repeat with remaining dough and filling.

Bake the Empanadas
Place the assembled empanadas on a baking sheet lined with parchment paper. Brush the tops with the beaten egg for a golden finish. Bake for 20-25 minutes or until golden brown.

Allow the empanadas to cool slightly before serving. Enjoy with additional salsa verde on the side.
