    Prepare the Apples

    Wash and chop the fresh apples into quarters, leaving the skin and seeds intact. Place them in a large pot.

    Simmer with Water

    Add water to the pot with the chopped apples. Bring to a boil, then reduce the heat and let it simmer for about 30 minutes until the apples are soft.

    Strain the Mixture

    Using a fine mesh strainer or cheesecloth, strain the apple mixture into a large bowl, pressing down on the apples to extract as much juice as possible.

    Add Sugar and Spices

    Return the strained liquid to the pot. Stir in the granulated sugar, cinnamon sticks, whole cloves, star anise, and lemon juice. Heat the mixture until the sugar has dissolved.

    Cool and Ferment

    Let the mixture cool to room temperature. Once cooled, add the yeast and stir gently. Cover the pot with a clean cloth and allow it to ferment in a dark, warm place for about 5-7 days.

    Bottle the Cider

    After fermentation, strain the liquid again to remove any sediment. Bottle the cider in clean bottles or cans, sealing them tightly. Optionally, you can carbonate it by adding a small amount of sugar before sealing.

    Refrigerate and Enjoy

    Refrigerate the bottles or cans of cider. Let it chill for a few hours before serving. Enjoy your homemade batch cider!
