Braised Pork

    Prepare the Pork

    In a large pot, heat some olive oil over medium heat. Add diced onions and minced garlic, sauté until translucent.

    Add Seasonings

    Stir in cumin, oregano, bay leaves, salt, and black pepper. Add the pork shoulder and sear on all sides.

    Braise the Pork

    Pour in chicken broth, cover, and let it simmer on low heat for about 3 hours or until the pork is tender.

    Shred the Pork

    Remove the pork from the pot, shred it using two forks, and return to the pot to soak in the juices.

Assemble the Sandwich

    Prepare the Bolillo Roll

    Slice the bolillo rolls in half and toast lightly.

    Layer the Ingredients

    Spread chipotle aioli on both sides of the rolls. Layer shredded pork, ham, baby Swiss cheese, pickled onions, and sweet & spicy pickles.

    Final Toast

    Place the assembled sandwiches on a panini press or grill them until the cheese melts and the bread is golden brown.

Purple Potato Hash

    Cook the Potatoes

    Cube the purple potatoes and boil until tender. Drain and set aside.

    Sauté the Hash

    In a skillet, heat olive oil and sauté diced onion until soft. Add in the boiled potatoes, season with salt and black pepper, and cook until crispy.

Optional Egg

    Cook the Egg

    Fry or poach the eggs to your liking, and place on top of the sandwich before serving.
