Method

Cooking the Gaucho Steak

Prepare the Steak

In a mixing bowl, combine olive oil, smoked paprika, cumin, garlic powder, salt, and black pepper. Rub this mixture all over the skirt steak and let it marinate for at least 30 minutes.

Cook the Steak

Preheat a grill or cast-iron skillet over medium-high heat. Cook the marinated skirt steak for 4-5 minutes on each side for medium-rare. Remove from heat and let it rest for 5 minutes before slicing.

Making the Poblano Chimichurri

Roast the Poblano

Char the poblano pepper over an open flame or under a broiler until blackened. Place it in a bag to steam for 10 minutes, then peel and remove seeds.

Make the Chimichurri

In a food processor, combine the roasted poblano, parsley, cilantro, red wine vinegar, garlic, olive oil, salt, and pepper. Blend until smooth and adjust seasoning to taste.

Preparing the Masa Potato Cakes

Mix Ingredients

In a bowl, combine the mashed potatoes, masa harina, egg, salt, and pepper. Mix until a dough forms.

Cook the Cakes

Heat olive oil in a skillet over medium heat. Shape the potato mixture into small cakes and cook for 3-4 minutes on each side until golden brown.
