Prepare the Purple Potato Hash
Start by peeling and dicing the purple potatoes into small cubes. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes and season with salt and pepper. Cook for about 10-12 minutes until they are tender and crispy, stirring occasionally.
Add Vegetables
Once the potatoes are crispy, add the diced red bell pepper and yellow onion to the skillet. Cook for an additional 5 minutes until the vegetables are tender.
Prepare the Chipotle Butter
In a small bowl, mix the softened unsalted butter with chipotle in adobo sauce and chopped fresh cilantro. Set aside.
Cook the Salmon
Heat the remaining tablespoon of olive oil in a separate skillet over medium-high heat. Season the salmon fillets with salt and black pepper. Place the salmon skin-side down in the hot skillet and cook for about 6-8 minutes until the skin is crispy. Flip the salmon and cook for an additional 2-4 minutes until cooked through.
Serve
To serve, place a generous portion of the purple potato hash on each plate, top with a crispy skin salmon fillet, and finish with a dollop of chipotle butter on top.
