Prep and Cook Chicken

    If using whole wings, separate into drumettes and flats (discard tips or save for stock). Pat wings dry thoroughly with paper towels—dry skin produces the crispiest result.

    Place wings in a large bowl. Sprinkle salt, black pepper, and baking powder over the wings. Toss until evenly coated. Baking powder helps crisp the skin when baked; if frying, it still helps browning.

    Choose cooking method: deep-fry, oven-bake, or air-fry. Preheat accordingly: for deep-frying, heat oil to 350°F (175°C) in a deep pot; for oven, preheat to 425°F (220°C) and line a rimmed sheet pan with foil and a wire rack; for air-fryer, preheat to 400°F (205°C).

    Deep-fry (best texture)

    Working in batches, carefully lower wings into hot oil (do not overcrowd). Fry 8–10 minutes until deep golden brown and internal temp reaches 165°F (74°C). Remove to a paper-towel-lined tray and rest 3 minutes.

    Oven-bake (simple, less oil)

    Arrange wings skin-side up on the wire rack. Bake 35–45 minutes, flipping once halfway, until skin is crisp and internal temp 165°F (74°C). For extra crispness, finish under broiler 1–2 minutes watching closely.

    Air-fryer (quick and crispy)

    Arrange wings in a single layer (work in batches). Air-fry 20–25 minutes at 400°F (205°C), shaking or flipping every 6–8 minutes, until crisp and 165°F internal.

Buffalo Sauce (base for many variations)

    In a small saucepan over low heat, melt the butter. Add the hot sauce, honey, apple cider vinegar, garlic powder, and salt. Stir until combined and warmed through (do not boil). Taste and adjust heat or sweetness.

    Keep sauce warm and transfer to a large mixing bowl for tossing with cooked wings.

Optional Sauce Preparations

    BBQ

    Warm 1/2 cup of your favorite BBQ sauce in a small saucepan or microwave-safe bowl for 20–30 seconds until pourable. For Spicy BBQ, stir in 1–2 tsp hot sauce to taste.

    Teriyaki

    Warm 1/2 cup teriyaki sauce. Optionally add 1 tsp sesame oil and 1 tsp grated ginger for extra flavor.

    Honey Garlic

    Combine 1/4 cup honey, 2 tbs soy sauce, 1 clove minced garlic, and 1 tsp cornstarch dissolved in 1 tbs water. Simmer 1–2 minutes until glossy and thickened.

    Doritos

    Toss hot wings in a bowl with 1 cup finely crushed Doritos and 1 tbs melted butter so chips adhere. Serve immediately to keep crunch.

    Sweet Chili

    Warm 1/2 cup sweet chili sauce and toss wings to coat.

    Hotty-Yaki / Honey Hot

    Mix 1/4 cup Buffalo sauce with 1/4 cup teriyaki and 1 tbs honey. Warm and toss wings to coat.

    Caesar Parmesan

    Toss hot wings with 1/3 cup Caesar dressing and 2 tbs finely grated Parmesan. Finish with a squeeze of lemon if desired.

    Ancho Chipotle

    Melt 2 tbs butter with 1 tsp ancho chili powder and 1/2 tsp chipotle powder, stir in 1 tbs honey and 1 tsp lime juice. Toss wings to coat.

    Spicy Dill

    Combine 2 tbs dill pickle brine with 1 tbs hot sauce and toss with wings; serve with a dill-mayo dip (mayonnaise + chopped dill + a little pickle brine).

    The DEATH SAUCE

    Very spicy—mix concentrated chili paste (e.g., 1–2 tsp of your hottest paste), 1 tbs honey, 1 tbs apple cider vinegar, 1 tbs melted butter. Start with small amounts and taste; warn guests. Toss wings sparingly.

Tossing & Serving

    Place cooked wings into the large mixing bowl containing the warm Buffalo sauce (or desired sauce). Toss vigorously until every wing is evenly coated. For coatings like Doritos, toss after saucing so crumbs stick.

    Arrange wings on a platter. Garnish with chopped parsley or sliced green onion. Serve with celery, carrot sticks and ranch and/or blue cheese dressing on the side.

    Label sauces for guests if you are offering multiple options (especially flag ‘The DEATH SAUCE’ as extremely spicy).
