Method
Prepare Seasoning & Marinade

In a small bowl combine chili powder, ground cumin, smoked paprika, garlic powder, onion powder, dried oregano, salt, black pepper and brown sugar. Stir to make a uniform seasoning blend.

Reserve 1 tablespoon of the blend for finishing. For chicken or pork, mix 1 tablespoon olive oil, 1 tablespoon lime juice and 1 tablespoon seasoning blend; toss protein with marinade and refrigerate 20–30 minutes. For ground beef, skip marinade and plan to cook with 1 tablespoon olive oil and the remaining seasoning blend during cooking. For black beans, combine beans with 1 tablespoon seasoning blend and 1 tablespoon lime juice.
Cook Proteins

Ground Beef (if selected)
Heat a large skillet over medium-high heat. Add 1 tablespoon olive oil. Add ground beef and break up with a spatula. Cook 6–8 minutes until browned. Sprinkle in half the seasoning blend (about 1.5 tsp) and 2 tablespoons water, stir, and simmer 2–3 minutes until mixture is evenly coated and slightly saucy. Taste and adjust salt/pepper.

Chicken Thighs (if selected)
Heat a large skillet over medium-high heat. Add 1 tablespoon olive oil. Add marinated chicken in a single layer, cook 4–6 minutes per side (total 8–12 minutes), stirring/cooking until internal temperature reaches 165°F (74°C) and edges are golden. Remove and let rest 5 minutes, then chop or shred to short bite-sized pieces.

Pork Shoulder (if selected)
Heat a heavy skillet or cast iron over medium-high heat with 1 tablespoon olive oil. Add pork pieces and sear 3–4 minutes per side until browned. Reduce heat to medium-low, add 2 tablespoons water or stock and remaining seasoning, cover and simmer 12–15 minutes until tender and cooked through. Rest 5 minutes and shred/chop.

Black Beans (if selected)
Warm a small saucepan over medium heat, add rinsed beans, 1 tablespoon lime juice and 1 tablespoon olive oil, stir in reserved seasoning to taste. Cook 4–5 minutes until heated through. Mash about 1/3 of the beans with the back of a spoon for texture.
Tortilla Warming & Prep

Warm a griddle or nonstick skillet over medium heat. Lightly brush each tortilla on both sides with a little vegetable oil (or briefly steam/warm in a tortilla warmer). Heat tortillas 30–45 seconds per side until pliable and slightly charred in spots. Keep tortillas warm wrapped in a clean kitchen towel or in a covered container.

Arrange toppings in bowls for self-serve: shredded lettuce, diced tomatoes, diced white onion, pico/salsa, pickled red onions, cilantro, cheeses, sliced jalapeños, lime wedges, sour cream/crema and guacamole.
Assemble Tacos

Place a warm tortilla on a plate. Spoon 2–3 tablespoons of your selected protein into the center (adjust for desired size). If using more than one protein per taco, use smaller amounts of each so total filling ≈ 2–3 tablespoons.

Add toppings as desired: a small handful shredded lettuce, 1–2 tablespoons diced tomato or pico, a sprinkle of diced onion, a few pickled red onions, a sprinkle of cotija, cilantro, and a drizzle of sour cream or lime crema. Finish with 1–2 squeezes of lime and hot sauce to taste.

Repeat until all tacos are assembled. Keep assembled tacos loosely covered to prevent drying if not serving immediately.
Serve & Holding Notes

Serve immediately with extra lime wedges and hot sauce. For a taco bar, set proteins in warm serving dishes, keep tortillas wrapped, and label toppings. Replenish hot proteins every 30–45 minutes; hold at 140°F (60°C) or greater if serving buffet-style.
