Domestic Draught (16 oz)

    Ensure tap and lines are clean and chilled. Pour directly into a clean, chilled 16 oz pint glass held at a 45-degree angle.

    Open the tap fully and let beer run gently down the side of the glass. When the glass is about two-thirds full, gradually tilt it upright and finish the pour to achieve a 1/2 to 1 inch head (foam).

    Serve immediately. If serving from a pitcher, pour from pitcher into individual glasses without additional ice unless requested.

House Wine (6 oz)

    Select the requested house wine (red or white). Use a clean wine glass appropriate to the style.

    Pour 6 oz of wine. If using a measuring pourer: one standard pour equals 6 oz. If freehand pouring, fill to the widest part of the bowl for white or slightly below for red to allow swirling.

    Present the wine upright to the guest and, if requested, offer a sample sip (for bottle service) before serving the full pour.

Highball or Mocktail (1 oz)

    Fill a clean highball glass with cubed ice to the top.

    Measure and pour 1 oz of the base spirit (or non-alcoholic substitute) over the ice.

    Add approximately 4 oz of the chosen mixer (club soda, tonic, cola, ginger ale) for a standard highball balance. For a mocktail, use 4 oz of the selected non-alcoholic mixer (sparkling water, juice, or soda).

    Stir gently with a bar spoon 3–4 turns to integrate spirit and mixer without excessive dilution.

    Garnish with a lemon or lime wedge or a cherry as appropriate and serve with a straw if desired.
