Prepare
Preheat oven to 350°F (175°C). Grease and line three 8-inch round cake pans (or two 9-inch) with parchment; lightly flour or cocoa-dust the pans and tap out excess.

Dry ingredients
In a large bowl, sift or whisk together 2 cups all-purpose flour, 3 tablespoons unsweetened cocoa powder, 2 cups granulated sugar, 1 tsp baking powder, 1 tsp baking soda, and 1 tsp fine salt until evenly combined.

Wet ingredients
In a separate bowl or large measuring jug, whisk 2 large eggs, 1 cup buttermilk, 1 cup neutral oil, and 2 teaspoons vanilla extract until smooth.

Combine
Add the wet mixture to the dry ingredients and stir until just combined. Slowly pour in 1 cup hot water while stirring gently; batter will be thin — this yields a moist crumb and strong chocolate flavor. If using, whisk in 1 tsp espresso powder dissolved in the hot water.

Bake
Divide batter evenly among prepared pans (use kitchen scale or measure by eye). Bake in preheated oven: three 8-inch pans for 22–26 minutes, or two 9-inch pans for 28–32 minutes, until a toothpick inserted into center comes out with a few moist crumbs but not wet batter.

Cool
Allow cakes to cool in pans for 10 minutes. Run a knife around edges, invert onto wire racks, remove parchment, and cool completely (about 1 hour) before filling and frosting. If cakes dome, level with a serrated knife.

Make chocolate ganache (dark chocolate)
Heat 1/2 cup of the heavy cream (from the 1 cup) in a small saucepan or microwave until just simmering. Pour over the 4 oz chopped dark chocolate with a pinch of salt. Let sit 1 minute, then stir until smooth. Cover and cool to thicken slightly at room temperature (about 15–25 minutes).

Make chocolate buttercream base
In a large mixing bowl, beat 1 cup softened unsalted butter and 4 oz softened cream cheese on medium speed until light and smooth, about 2–3 minutes. Reduce speed and gradually add 4 cups powdered sugar, alternating with the remaining 1/2 cup heavy cream as needed, to reach a spreadable consistency.

Add cocoa & semisweet chocolate
Sift in 1 cup unsweetened cocoa powder and add 1 tsp espresso powder (optional) and a pinch of fine salt. Beat until combined. Melt the 6 oz semisweet chocolate (double boiler or microwave in 20–30 second bursts, stirring) until smooth and let cool until just lukewarm. Fold or beat the melted semisweet chocolate into the buttercream until uniform. If the frosting becomes too loose, chill 10–15 minutes and re-whip briefly.

Create milk chocolate swirl (optional filling)
Melt the 4 oz milk chocolate until smooth. Allow to cool slightly. Reserve 1/2 cup to swirl into the filling layers or to create a softer ribbon inside the cake. Keep remainder for decorating or making curls.

Level & divide
If you baked three layers, use them as-is. If you baked two layers, split each horizontally to create three even layers. Place the bottom layer on a cake board or serving plate and brush lightly with a tablespoon of milk or cooled brewed espresso if desired to moisten.

Fill
Spread a thick even layer (about 3/4 to 1 cup) of the triple chocolate buttercream across the first cake layer. If using the milk chocolate ribbon, spoon or pipe small dollops of the slightly cooled milk chocolate onto the buttercream and use a spatula to swirl gently—do not overmix. Top with the next cake layer and repeat. Reserve about 1 to 1 1/2 cups frosting for final exterior coating and extra decoration.

Crumb coat
Apply a thin crumb coat of frosting over the top and sides of the assembled cake to trap crumbs. Chill in refrigerator 15–20 minutes to set.

Final coat & ganache drip
Apply the remaining frosting to achieve a smooth finish. If you want a glossy chocolate drip, warm the prepared dark chocolate ganache slightly (it should be pourable but not hot) and spoon or pipe around the top edge allowing it to drip down the sides. Spread remaining ganache in the center if desired.

Decorate
Press chocolate shavings/curls around the sides or scatter on top. Dust the top lightly with 1 tablespoon cocoa powder through a sieve. Finish with a light sprinkle of coarse sea salt if using. Chill briefly to set (10–20 minutes). Bring to room temperature 30 minutes before serving for best texture.

Store covered in refrigerator for up to 4 days. Bring to room temperature before serving. For longer storage, freeze wrapped for up to 1 month; thaw overnight in refrigerator then come to room temperature before serving.
