Make sauce
In a small bowl combine 3 tbsp mayonnaise, 1 tsp Dijon mustard, 1 tbsp pure maple syrup, 1 tsp apple cider vinegar and 1 tsp hot sauce (if using). Whisk until smooth. Taste and season with a pinch of salt and black pepper. Refrigerate while preparing burger; this sauce will also be brushed lightly on buns and used as a finishing condiment.

Form patties
Place 1 lb ground chuck in a bowl. Add 1 tsp Worcestershire sauce, 1 tsp kosher salt and 1 tsp freshly ground black pepper. Gently mix with your hands until just combined; do not overwork. Divide into two equal portions and form gently into 2 patties about 3/4" thick and slightly larger than the buns (they will shrink slightly while cooking). Make a shallow dimple in the center of each patty with your thumb to help them cook evenly.

Cook patties
Heat a heavy skillet or cast-iron pan over medium-high heat until hot. Add 1 tbsp unsalted butter and swirl to melt. Add patties, leaving space between them. Cook undisturbed for 3-4 minutes, until a brown crust forms. Flip and cook 3-4 minutes more for medium (adjust 1-2 minutes for rarer or well-done). In the last minute of cooking, place 1 slice of cheddar on each patty and cover the pan for 30-60 seconds to melt the cheese. Remove patties to a plate and let rest for 2-3 minutes.

Prepare bacon
If using back/peameal bacon: heat a separate skillet over medium heat. Add the 4 oz bacon slices in a single layer and cook 2-3 minutes per side until browned and cooked through. Transfer to a paper towel-lined plate. If using thicker bacon, adjust time accordingly. If desired, during the last 30 seconds of cooking brush lightly with 1 tbsp maple syrup for a glazed finish.

Toast buns
Split 2 buns and lightly butter cut sides with 1 tbsp unsalted butter. Toast buttered sides on the hot skillet or a griddle for about 30-60 seconds until golden and crisp. Remove and keep warm.

Assemble burgers
Spread about 1 tablespoon of the maple Dijon sauce on the bottom half of each bun. Place a lettuce leaf on the sauce, then a tomato slice. Set the cheese-topped patty on the tomato. Top each patty with two slices of cooked back/peameal bacon, a caramelized pineapple ring if using, red onion slices and pickle slices. Spoon a little extra maple Dijon on the top bun, close the burger and serve immediately.

Serving suggestion
Serve 2 Canadian Burgers hot with fries or poutine-style side. Provide extra maple Dijon sauce on the side for dipping.
