Method

Prep and par-cook cauliflower

    Trim the cauliflower into uniform bite-sized florets, about 2–3 cm each. Rinse and pat dry thoroughly. This recipe makes roughly three small orders (about 900 g raw).

    Bring a medium pot of water to a boil. Add 1/2 tsp salt. Blanch the florets for 2 minutes to slightly tenderize, then immediately transfer to an ice bath to stop cooking. Drain and pat completely dry with paper towels.

Regular Coated Cauliflower

    Make coating

    In a bowl combine 1 cup all-purpose flour, 1/4 cup cornstarch, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp paprika and 1/2 tsp salt. Gradually whisk in 3/4 cup cold water until a thick batter forms (slightly thinner than pancake batter). Do not overmix — a few small lumps are fine.

    Heat oil in a deep pot or fryer to 175°C (350°F). Working in batches, dip dry florets into the batter to coat fully, let excess drip off, then fry 3–4 minutes until golden and crisp. Remove with a slotted spoon to a rack or paper towel-lined tray and season immediately with a pinch of salt. Keep warm in a low oven (90–100°C) while finishing other batches.

Boneless Style Cauliflower

    Marinate

    Whisk 1.5 cups buttermilk with 1 tbsp hot sauce (optional) and 1 tsp salt. Submerge a third of the blanched, dried florets in the mixture and let sit 20–30 minutes. This helps the coating adhere and gives a tender inside.

    Breading and fry

    Set up a dredge station: 1 cup all-purpose flour seasoned with 1 tsp salt and 1 tsp smoked paprika in one shallow bowl; 1 cup panko breadcrumbs in another. Remove florets from buttermilk, shake off excess, dredge in flour, then press into panko to coat thoroughly. Fry in oil heated to 175°C (350°F), 3–4 minutes until golden brown and crispy. Drain on a rack and season with a little salt.

Tempura Cauliflower

    Make tempura batter

    Keep ingredients and tools cold. In a bowl, lightly beat 1 egg, add 3/4 cup ice-cold sparkling water. In a separate bowl, sift 1 cup cake flour (or low-protein flour) with 1/4 cup cornstarch and 1/2 tsp salt. Pour wet into dry and stir briefly — batter should be lumpy and thin. If it thickens, add a tablespoon of cold sparkling water; do not overmix.

    Heat oil to 175–180°C (350–360°F). Pat florets dry, dip into tempura batter letting excess drip off, and fry 2–3 minutes until the batter just turns pale gold and light, not dark. Remove to a rack. Tempura is best served immediately for maximum crispness.

Finish & Serve

    Arrange your chosen three styles (Regular, Boneless, Tempura) on a platter. Drizzle or serve small bowls of honey-sriracha sauce and ranch/blue cheese on the side. Sprinkle chopped parsley over the Regular and Boneless pieces and finish with lemon wedges for squeezing.

    Estimate one small order portion ≈ 300 g raw cauliflower per style. The full recipe yields three small orders. Serve immediately while hot and crispy.
