Rim Seasoning
Method
Rim Preparation
- 1
Combine fine sea salt, smoked paprika, additional celery salt and a few grinds of black pepper on a small plate; spread into an even shallow ring.
- 2
Mixing the Caesar
- 3
- 4
In a mixing glass or shaker (no need to shake vigorously), combine Clamato juice (6 oz), cold filtered water (1 oz), freshly squeezed lime juice (0.5 oz), Worcestershire sauce (3 tsp), hot sauce (3 tsp), prepared horseradish (0.5 tsp), celery salt (0.25 tsp), freshly ground black pepper (about 6 grinds), and kosher salt (1 tsp).
- 5
Stir the mixture thoroughly for 10–15 seconds with a bar spoon to dissolve the salts and integrate the horseradish and sauces. Taste and adjust seasoning: add up to 0.5 tsp more Worcestershire or 1–2 additional drops of hot sauce if you prefer more heat, or a little more lime for brightness.
- 6
Add chilled vodka (1.5 oz) to the mixing glass and gently stir for another 5–8 seconds to combine and chill. Do not shake — the goal is to keep the drink slightly silky and retain carbonation if a carbonated Clamato product is used.
- 7
Strain or pour the finished mixture into the rimmed glass over the reserved ice, leaving the rim intact.
Garnish & Serve
- 8
Garnish with a celery stalk and a lime wedge. Optionally skewer and add a pickled asparagus/pickled bean and/or a cooked bacon strip across the top for a signature presentation.
- 9
Serve immediately with a short stirring straw so the guest can re-stir before sipping, and provide napkins for the rim and garnishes.
