Croutons

Prepare and toast croutons
Preheat the oven to 375°F (190°C). Toss the cubed day-old baguette with 2 tbsp extra-virgin olive oil and 1 tsp salt until evenly coated. Spread in a single layer on a baking sheet and bake for 10–14 minutes, stirring once halfway through, until golden brown and crisp. Remove from oven and let cool.
Caesar Dressing

Mince garlic
Smash the 2 garlic cloves with the side of a chef's knife and finely mince. Sprinkle a pinch of salt over the garlic and use the flat of the knife to mash into a smooth paste.

Combine base ingredients
In a medium bowl (or the bowl of a food processor), add the 2 egg yolks, garlic paste, 4 finely chopped anchovy fillets, 1 tsp Dijon mustard, 1 tsp Worcestershire sauce, and 2 tbsp fresh lemon juice. Whisk (or pulse once) until combined.

Emulsify the dressing
With continuous whisking (or with the food processor running on low), slowly drizzle in the extra-virgin olive oil (3 tbsp) followed by the neutral oil (1 cup) in a thin, steady stream. Continue until the dressing is thick and emulsified. If the dressing becomes too thick, whisk in 1–2 tsp warm water to loosen.

Finish dressing
Fold in 1 cup finely grated Parmesan cheese, then season with 1 tsp sea salt and 1 tsp freshly ground black pepper. Taste and adjust: add more lemon juice for brightness, more salt for seasoning, or a pinch of sugar if it tastes too sharp. Chill briefly if not using immediately (up to 2 hours).

Toss lettuce with dressing
Place the torn romaine hearts into a large salad bowl. Add 3/4 to 1 cup of the dressing (reserve extra in case some guests want more). Toss gently but thoroughly so each leaf is lightly coated.

Add croutons and cheese
Add the cooled croutons and toss once more. Sprinkle the finishing 1 oz freshly grated Parmesan over the salad and grind a little extra black pepper on top.

Serve
Divide the salad among 4 plates or bowls. Serve immediately with lemon wedges on the side and optional sliced grilled chicken breast for a protein addition.
