Shrimp Add-On
Method
Shrimp Add-On
- 1
Prepare shrimp
If shrimp are frozen, thaw overnight in the refrigerator or place in a sealed bag and submerge in cold water for 15–20 minutes. Pat shrimp very dry with paper towels to ensure good sear and prevent steaming.
- 2
Season
Place the 12 shrimp in a bowl. Sprinkle with 1/2 tsp kosher salt, 1/4 tsp black pepper, 1/4 tsp garlic powder, and 1/4 tsp smoked paprika. Toss with 1 tablespoon olive oil to coat evenly so seasoning adheres.
- 3
Preheat pan
Heat a large skillet (preferably stainless steel or cast-iron) over medium-high heat until hot, about 1–2 minutes. Add 1 tablespoon unsalted butter and allow it to melt and foam but not burn.
- 4
Sear shrimp
Add shrimp to the hot pan in a single layer without crowding (work in two batches if needed). Cook undisturbed 1.5–2 minutes until the underside is pink and beginning to char. Flip and cook another 1–1.5 minutes until opaque and just cooked through (internal temperature ~120–125°F for medium, 130°F for fully firm). Total cook time per batch ~3 minutes.
- 5
Finish and flavor
Remove pan from heat. Immediately squeeze 1 teaspoon fresh lemon juice over the shrimp and sprinkle 1 tablespoon chopped parsley and 1/8 tsp red pepper flakes if using. Toss briefly to coat in the pan juices.
- 6
Serve
Transfer shrimp to the menu item as an add-on or to a small ramekin. Let rest 1 minute; serve warm so the add-on complements the main dish. If preparing ahead, hold warm no longer than 15 minutes to avoid overcooking.
