Fruit & Herb Syrup

    Cook fruits

    In a small saucepan, combine 1 cup raspberries, 1 cup blueberries, 1 tablespoon granulated sugar, and 2 tablespoons water. Bring to a gentle simmer over medium-low heat.

    Simmer, stirring occasionally, until the fruit breaks down and the sugar dissolves, about 5 minutes.

    Remove from heat and add 6 mint leaves. Allow to steep 8 minutes to impart a fresh herbal note.

    Strain the mixture through a fine-mesh sieve into a small bowl, pressing on the solids to extract juices. You should end up with roughly 3–4 tablespoons of syrup. Discard solids (or reserve for another use). Let syrup cool to room temperature (about 10 minutes) or refrigerate briefly.

Assemble Soda Base

    Fill two tall glasses with crushed ice, dividing the 1 cup crushed ice between them.

    Divide the cooled fruit-herb syrup between the two glasses (about 1.5–2 tablespoons each).

    Pour 1 cup club soda and 1/2 cup chilled ginger beer into each glass (total per glass: 1 cup club soda + 1/2 cup ginger beer). Pour gently to preserve carbonation.

    Stir once gently with a bar spoon to combine syrup and soda without flattening the bubbles.

Garnish & Serve

    Garnish each glass with 2 fresh raspberries, a lime wheel on the rim, and a small mint sprig. Tuck the remaining 2 mint leaves into the drink for aroma if desired.
