Raspberry Syrup

    Combine and simmer

    Place raspberries, granulated sugar, and water in a small saucepan. Bring to a gentle simmer over medium heat, stirring occasionally to dissolve the sugar and break down the berries, about 5–7 minutes.

    Strain and finish

    Remove from heat and mash the mixture lightly with a spoon or spatula. Strain through a fine-mesh sieve into a bowl, pressing to extract juices. Discard solids. Stir in 1/2 tablespoon fresh lemon juice. Let cool completely. Refrigerate until needed. Yields ~1 cup.

    Chill glass

    If desired, chill a coupe or rocks glass by filling it with ice and cold water while you prepare the drink.

    Dry shake (if using egg white)

    In a cocktail shaker, combine 2 oz gin, 0.75 oz fresh lemon juice, 0.75 oz raspberry syrup, and 1 whole egg white (if using). Seal and shake vigorously without ice for 15 seconds to emulsify and build foam.

    Wet shake

    Add a large handful of ice to the shaker. Shake again vigorously for 10–15 seconds until chilled and the outside of the shaker is frosty.

    Strain

    Discard ice and water from the chilled glass if you chilled it. Double-strain the cocktail into the chilled coupe or rocks glass using a fine-mesh strainer to remove any ice shards and raspberry seeds.

    Finish and garnish

    Add 2 dashes Angostura bitters on top of the foam (if egg white used) and use a toothpick to create a small design if desired. Garnish with 2 fresh raspberries skewered or floated and a lemon twist on the rim.
