In a large bowl, whisk together flour and salt. Make a well, add the foamy yeast mixture and 2 tablespoons olive oil. Stir with a wooden spoon or spatula until a shaggy dough forms.

Turn dough onto a lightly floured surface (use the optional cornstarch/flour). Knead for 6–8 minutes until smooth and elastic. If dough is sticky, dust with up to 2 tablespoons additional flour.

Divide and rest
Punch down the dough, divide into two equal portions for two 12-inch pizzas (or keep whole for one large). Shape into balls, cover, and let rest 15–20 minutes before shaping.

Add crushed tomatoes, dried oregano, dried basil, salt, black pepper, and red pepper flakes (if using). Bring to a gentle simmer, reduce heat to low, and cook 10–12 minutes, stirring occasionally, until slightly thickened. Taste and adjust seasoning. Remove from heat and let cool to room temperature.

Place a pizza stone or inverted heavy baking sheet on the middle rack of the oven. Preheat oven to 500°F (260°C) for at least 30 minutes to ensure the stone is hot. If you cannot reach 500°F, preheat as high as your oven allows.

Shape crust
On a surface dusted with cornmeal or semolina, flatten one rested dough ball with your fingers to release air. Press from the center outward to form a 12-inch round, leaving a slightly thicker 1/2–3/4-inch rim. Pick up and gently stretch the dough with your knuckles if needed. Transfer shaped dough to a pizza peel or a parchment-lined baking sheet dusted with cornmeal.

Sauce and cheese
Spread about 1/2 cup of the prepared tomato sauce evenly over the dough, leaving the rim exposed. Distribute half of the mozzarella over the sauce in an even layer.

Arrange pepperoni slices evenly over the cheese, sprinkle the chopped cooked bacon and thinly sliced red onion. Finish with a light sprinkle of grated Parmesan.

Slide the pizza onto the preheated stone or baking sheet. Bake for 8–12 minutes, rotating once halfway, until the crust is golden-brown and cheese is bubbly and lightly browned. Baking time will vary with oven temperature and stone heat.

Remove pizza from oven and transfer to a cutting board. Drizzle 1 teaspoon olive oil over the top, scatter baby arugula and fresh basil leaves. Season with cracked black pepper to taste. Let rest 2–3 minutes, then slice and serve.
