Prepare cauliflower
Wash and thoroughly dry the cauliflower. Cut into uniform 1–1.5 inch florets so pieces cook evenly. Pat dry again with paper towels to remove surface moisture.

Make batter
In a medium bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Add the egg and cold water and whisk until just combined into a thick batter. Batter should coat the back of a spoon — add up to 1–2 tablespoons more water if it is too thick, or 1 teaspoon more flour if too thin.

Coat florets
Working in batches, toss cauliflower florets in the batter, turning to fully coat each floret. Let excess drip off for 20–30 seconds before frying.
Frying

Heat oil in a heavy-bottomed pot or deep skillet to 350°F (175°C). If you don't have a thermometer, test by dropping a small bit of batter— it should sizzle and rise slowly. Use about 2 cups oil to allow shallow-deep frying with 1–1.5 inches of oil depth.

Use a slotted spoon to transfer fried florets to a wire rack set over a baking sheet (or paper towels) to drain. Immediately lightly season with the extra 1/4 tsp salt while still hot. Keep in a warm oven (200°F / 95°C) if frying multiple batches so all are served hot and crisp.

While frying, make the sauce: in a small saucepan over medium-low heat combine the maple syrup, honey, apple cider vinegar, hot sauce, red pepper flakes, smoked paprika, and 1/4 tsp salt. Stir to combine.

Bring mixture to a gentle simmer, then reduce heat to low and let simmer 3–4 minutes, stirring occasionally, until slightly thickened and glossy. Do not boil vigorously— you want a syrupy consistency.

Remove saucepan from heat and whisk in the tablespoon of unsalted butter until melted and incorporated. Taste and adjust heat/sweetness by adding a pinch more red pepper flakes for heat or 1 teaspoon more vinegar for brightness.

Place the hot fried cauliflower in a large bowl. Pour 2–3 tablespoons of the maple hot honey sauce over the cauliflower and gently toss to coat each piece. Add more sauce to taste, but avoid making the coating soggy — a light glossy glaze is ideal.

Transfer coated cauliflower to a serving platter. Sprinkle chopped parsley or cilantro and toasted sesame seeds over the top. Serve immediately with lemon wedges on the side to squeeze over bites for brightness.

Leftovers can be stored separately: keep fried cauliflower and sauce in airtight containers in the refrigerator for up to 2 days. Reheat cauliflower in a 400°F (200°C) oven for 8–10 minutes to regain crispness, then re-glaze with warmed sauce.
