Hot Honey Ranch

    Make the sauce

    In a small bowl, combine 3 tablespoons mayonnaise, 2 tablespoons buttermilk and 1 tablespoon sour cream. Whisk until smooth to create a creamy base.

    Add 1 teaspoon lemon juice, 1 teaspoon garlic powder, 1 teaspoon dried dill, and 1 teaspoon chopped fresh chives (if using). Stir to incorporate.

    Stir in 2 tablespoons hot honey and 1 teaspoon hot sauce. Taste and season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Adjust hot honey or hot sauce to increase or decrease heat/sweetness.

    Cover and refrigerate the dressing while you assemble the sandwich so flavors meld (10–15 minutes recommended, but you can proceed immediately if short on time).

Sandwich Assembly & Toasting

    Prepare fillings: If bacon isn't already cooked, cook 2 slices until crisp (pan-fry over medium heat 6–8 minutes, turning once); drain on paper towel. Slice tomato and wash lettuce.

    Butter one side of each bread slice evenly with 1 tablespoon room-temperature unsalted butter (split between both slices). Lightly brush buttered sides with 1/2 teaspoon neutral oil to help golden crust (optional).

    Heat a skillet or griddle over medium heat until hot. Place one buttered-side-down slice of bread on the skillet.

    Layer on the hot-bottom slice: place 2 slices of sharp cheddar, then 3 oz smoked ham, then cooked bacon, then tomato slices, and lettuce. Spoon about 1–1.5 tablespoons of the hot honey ranch over the tomato or lettuce (reserve remaining sauce for serving). Top with remaining 2 slices cheddar (if you prefer extra melt) and place the second slice of bread buttered-side-up on top.

    Cook sandwich 3–4 minutes on the first side over medium heat, pressing gently with a spatula to promote even contact. When the bread is golden brown and cheese begins to melt, carefully flip the sandwich and cook another 2–3 minutes until the second side is golden and cheese is fully melted. If the bread is browning too quickly before cheese melts, reduce heat to low and cover skillet for 1–2 minutes to trap heat.

    Remove sandwich to a cutting board and let rest 1 minute. Slice in half on the diagonal and serve with remaining hot honey ranch on the side for dipping or drizzling (about 1–1.5 tablespoons left).
