Add‑On Options
Method
Add‑On Options
- 1
General plating
Select your base dessert (cake slice, brownie, pie, panna cotta, or plain plate). Place the base in the center of a serving plate. Warm add‑ons should be applied just before serving; cold add‑ons (ice cream, whipped cream) should be prepared and kept chilled until assembly.
- 2
Vanilla ice cream
Scoop 1 scoop of high‑quality vanilla ice cream and place it next to or on top of the warm dessert (if the base is warm, serve immediately so ice cream contrasts hot/cold). If using with a plated cold dessert, serve the scoop to the side to prevent melting onto the plate until served.
- 3
Whipped cream
Pipe or spoon 2 tablespoons of whipped cream atop the dessert or next to the ice cream. For a neater presentation, use a piping bag fitted with a star tip; alternatively, lightly whip chilled heavy cream with 1 tsp sugar until soft peaks form and portion 2 tbsp per serving.
- 4
Warm chocolate sauce
Warm chocolate sauce to 35–45°C (95–115°F) so it is pourable but not scalding. Drizzle 2 tablespoons over the ice cream or dessert in a zigzag or circular motion. To make a quick sauce: gently heat 2 tbsp chocolate chips with 1 tbsp heavy cream until smooth.
- 5
Caramel sauce & sea salt
Drizzle 2 tablespoons of caramel sauce over the dessert and finish with a pinch of flake sea salt to enhance flavor. For a balanced finish, add salt sparingly — one small pinch per serving.
- 6
Toasted chopped nuts
Toast 1 tablespoon of chopped nuts in a dry skillet over medium heat for 2–3 minutes, stirring constantly until fragrant and lightly browned. Allow to cool slightly and sprinkle over the dessert and ice cream for crunch.
- 7
Fresh berries
Rinse and gently pat dry 1 ounce of mixed berries. Arrange berries beside or on top of the dessert for bright acidity and color contrast. If strawberries are used, quarter larger berries for easier eating.
- 8
Crumbled cookie or graham cracker crumbs
Crumble 2 tablespoons of cookies or graham crackers by placing in a bag and crushing with a rolling pin or pulsing briefly in a food processor. Sprinkle crumbs around the plate edge or over the ice cream for texture.
- 9
Affogato (espresso add‑on)
If making an affogato style add‑on, pull 1 shot of hot espresso and pour directly over the scoop of vanilla ice cream at the table. Serve immediately to enjoy the contrast of hot espresso and cold ice cream.
- 10
Cinnamon finish
Lightly dust 1/2 to 1 teaspoon ground cinnamon over whipped cream or the plate for warm spice notes. Avoid over‑dosing; a light dusting is enough.
- 11
Garnish
Finish the dessert with 1 fresh mint leaf placed on the whipped cream or beside the berries for color and aroma.
- 12
Timing and storage notes
Keep cold add‑ons refrigerated until assembly and warm sauces gently heated right before serving. Toasted nuts and crumbs can be prepared up to 24 hours ahead and stored in an airtight container at room temperature. Assemble add‑ons at service to maintain texture and temperature contrasts.
