Prep the chicken
Trim any fat from the chicken breasts. Slice each breast into 3–4 even strips about 1" wide so you have finger-sized pieces (about 8–12 pieces total depending on breast size). Pat the strips dry with paper towels.

Season the chicken pieces evenly with kosher salt, black pepper, garlic powder, and smoked paprika. Toss gently so seasoning coats each piece.

Place the flour in a shallow bowl. In a second shallow bowl whisk the eggs, milk (or buttermilk), and hot sauce until combined. In a third shallow bowl combine breadcrumbs, grated Parmesan, dried oregano, dried thyme, and coarse salt; stir to combine.

Working in batches, dredge each chicken strip first in the flour (tap off excess), then dip into the egg wash ensuring full coating, and finally press into the breadcrumb mixture so the crumbs adhere well. Place breaded fingers on a wire rack set over a sheet pan. Let rest 10 minutes to help the coating set (or refrigerate up to 30 minutes).

Heat the oil
Pour the vegetable oil into a deep skillet or Dutch oven to a depth of about 1"–1.5". Heat over medium-high heat until the oil reaches 350°F (175°C). If you don't have a thermometer, test with a small pinch of breadcrumb — it should sizzle and brown within ~30 seconds.

Fry the chicken fingers in batches so they are not crowded (3–4 pieces per batch depending on pan size). Cook 3–4 minutes per side, turning once, until golden brown and an instant-read thermometer inserted into the thickest part reads 165°F (74°C). Adjust heat to maintain a steady 325–350°F; lower if they brown too quickly before cooking through.
