Mix and Form
Place ground beef in a bowl. Add kosher salt, black pepper, and Worcestershire sauce. Gently mix with your hands just until combined—do not overwork. Divide into two equal portions and form each into a 4-5 inch patty about 3/4 inch thick. Make a slight dimple in the center of each patty with your thumb to prevent puffing while cooking.

Cook
Heat a grill or heavy skillet over medium-high heat and brush with vegetable oil. When hot, place patties on the surface and cook for 3-4 minutes per side for medium (internal temperature ~160°F/71°C for ground beef) or adjust time to desired doneness. If adding cheese, place a slice on each patty during the last 30-60 seconds and cover briefly to melt. Remove patties and let rest for 2 minutes before assembling.

Mix and Form
In a bowl combine ground chicken, grated onion (squeeze out excess juice), minced garlic, smoked paprika, kosher salt, black pepper, and panko breadcrumbs. Mix until evenly combined without over-handling. Divide into two equal portions and form into patties about 3/4 inch thick, making a shallow dimple in the center of each patty.

Cook
Heat a skillet or grill over medium heat and add vegetable oil. Cook patties 5-6 minutes per side, or until internal temperature reaches 165°F (74°C) and exterior is golden brown. If using cheese, add a slice in the last minute and cover to melt. Transfer to a plate and rest 2 minutes before assembling.

Prepare Mixture
In a bowl mash the black beans roughly with a fork (leave some texture). Add grated carrot, chopped onion, minced garlic, cumin, smoked paprika, salt, pepper, and panko breadcrumbs. Stir until mixture holds together; if too wet, add an extra tablespoon of panko. Form into two patties about 3/4 inch thick.

Assemble Burgers
Place lettuce on the bottom bun to create a moisture barrier. Add the cooked patty (beef, chicken, or veggie). Top with cheese if used, then tomato slices, red onion, and pickles. Spread ketchup, mustard, and mayonnaise on the top bun to taste, then close burger. Serve immediately with your choice of sides.
